Ingredients

4 cups diced poached chicken, recipe follows
1 stalk celery, cut into 1/4-inch dice
4 scallions, trimmed and thinly sliced or 1/4 cup sweet onion cut into 1/4-inch dice
1 1/2 teaspoons finely chopped fresh tarragon or fresh dill
2 tablespoons finely chopped parsley
1 cup prepared or homemade mayonnaise
2 teaspoons strained freshly squeezed lemon juice
1 teaspoon Dijon mustard
2 teaspoons kosher salt

Directions

In a mixing bowl, toss together the chicken, celery, scallions and herbs. Set aside.

In a small bowl, whisk together the mayonnaise, lemon juice, mustard, salt and pepper to taste. Add to the chicken and mix gently until combined. Refrigerate until ready to serve.

Cook's Note: Serve on a bed of lettuce with sliced tomatoes, in half an avocado or in a chicken club sandwich made with artisanal bread, crispy smoked bacon, vine-ripened tomatoes and lettuce.

POACHED CHICKEN FOR SALADS
10 sprigs parsley
2 sprigs fresh thyme
1 small onion, halved
1 small carrot, halved
1 stalk celery, halved
3 pounds chicken breasts halves, on the bone and fat trimmed
5 to 6 cups chicken broth, homemade or low-sodium canned

Put the parsley, thyme, onion, carrot, celery, and chicken breasts in a medium saucepan. Cover with the broth, and bring just to a boil. Lower the heat to very low and cover. Poach the chicken fo r 20 minutes or until firm to the touch. Remove the pan from the heat, uncover, cool the chicken in the liquid for 30 minutes.

Transfer the chicken to a cutting board and reserve the liquid. Bone and skin the chicken and cut the meat into 1 inch cubes. Discard the bones and skin.

Strain the broth and store, covered, in the refrigerator for 3 days or freeze for later use. Remove any fat from the surface of the broth before using. Yield: 4 cups cubed chicken or 4 to 6 servings

A Beef Jerky History Lesson and Recipe!

Originally, beef jerky in America was probably invented by Native Americans using whichever meat was available at the time; Bear meat, Buffalo meat, Mountain Lion and even Raccoon and smaller animals.

Worldwide, making jerky has no doubt been around since someone discovered that meat tasted better when it was cooked or smoked over a fire. This happened when a lightning bolt struck the first tree. Besides tasting better, it was healthier.

In the beginning meat was cooked on the end of a sharp stick or just thrown on the coals to burn. Much later, some unidentified frontier chef discovered that if you threw on a pile of wild onions with the meat, you had an onion flavored strip of jerky.

Native Americans learned that not everyone likes the taste of plain smoked meat. As time passed they began using various plants and herbs growing in the woodlands, mountains and deserts. They also came to know the plants that were harmful to humans.

Early settlers and North American Indians dried or jerked meat from Deer, Antelope, Elk or Buffalo, depending on the area of the country in which game was more plentiful. Moose meat was prevalent if you live in the Northwest. Deer was plentiful in the Southwest and northern Midwest.

This brings us today, and the way we make jerky. Now we use mostly beef for our jerky though where deer are plentiful, hunters make venison jerky. No longer does one have to build a teepee, build a smoky fire in the center with strips of meat dangling from poles hanging horizontally throughout the tent.

Nowadays, foodhydrators dehydrators are used to dry vegetables, fruits and meat. I use the personal ones with plastic trays and a small electric motor to distribute the heat. They are inexpensive but do a good job.

Instead of getting expensive steaks or roasts, I use the cheapest cuts of meat I can find, usually sirloin tip or round steak. After being in the freezer for a couple of hours, it is easy to cut into strips about an eighth of an inch. This way you can uniformly have precision cuts, which is almost impossible to do unless the meat is slightly frozen. With a slicer you can get a perfect cut every time, but most of us don't have such a machine.

Next, you will have to marinate the meat. Unless you like the taste of unadulterated meat, fresh out of the super market, you will have to buy or make your own marinade. I've learned to like my own recipe.

I try to make a low sodium Beef Jerky. Because most Soy Sauces and Worchester Sauces have 700 to 800 grams of sodium, I shop around for a premixed sauce that has these two ingredients with half the salt. A lot of sodium and high blood pressure do not mix.

Here is a recipe that I enjoy.

Ingredients:

2 pounds steak or roast or anything that is on sale
1 tablespoon sorghum molasses
2 teaspoons freshly ground black pepper
2 teaspoons onion powder
1 teaspoon red pepper powder
1 teaspoon garlic powder
3/4 cup Worcestershire sauce
3/4 cup soy sauce
2 teaspoons lemon juice

Once you have mixed all the above thoroughly, put it in any container that will hold it all and let it set overnight. Pour the mixture over the meat strips. Make sure all the meat is covered and then let it set for 45 minutes.

Next, place the strips of meat on the hydrator trays and let them cook for about eight hours. The hard part is done. Exercise a little patience and you will have surprisingly good beef jerky.

I've made beef jerky at home with ground beef countless times. And although it's easy to make, it's an investment of time and patience. The ground beef and seasoning are mixed together (that's the easy part). Then the meat needs to be pressed into strips (this is the time-consuming part). The strips are then placed in the dehydrator. That's when patience is required because, depending on what type of jerky you are making it takes 4-12 hours to dry and become jerky.
If you make your own jerky keep in mind that it shrinks a lot, sometimes up to two-thirds. You may think you're making a lot of jerky until you open your dehydrator back up after the meat has dried and you see little pieces of meat where there used to be big pieces of meat.

Although some people enjoy making their own beef jerky, most people prefer to buy their beef jerky already made. There are lots of choices. In addition to the choices at your local grocer and convenience store, many meat markets and butcher shops make and sell their own beef jerky.

The flavor choices are varied too. Although traditional beef jerky is my favorite flavor, I also enjoy peppered and teriyaki flavored beef jerky. If you're wondering about the history of jerky and where it originated, it seems to be a little unclear. Some people say Native Americans made the first jerky (buffalo jerky) thousands of years ago. Other people say an ancient Inca tribe called the Quechua made the first jerky in the 1500's. Although the process to make beef jerky have changed and been modernized over time, the same basic procedure of thinly slicing meat, adding seasonings, and drying it with a low heat are the same as when jerky was first made.

Jerky is a food that's likely here to stay. And although beef jerky is by far the most popular type of jerky, more and more people are becoming adventurous in their tastes and want to try some of the more "exotic" types of jerky. Select a 1/2 inch think flank or top round steak. trim away all fat then partially freeze until firm. Slice across the grain in a 1/4 to 1/2 inch wide strips. Place meat strips in a shallow dish or heavy plastic bag. Add soy or terriyaki sauce to cover meat. If desired onion or garlic powder or Worcestershire sauce can be added. Toss to coat each piece. Cover and refrigerate several hours or over night. Lift meat from marinade, drain will then air dry for a couple of hours. Arrange meat strips in single layer on fine wire screen or cake cooling rack. Place in low temp. oven (175 to 200 degrees) or slowly smoke-cook in smoker until meat is completely dried. Store in air-tight container. Serve as a snack or appetizer.

Beef Jerky #3

1/2 ts Pepper (MORE FOR HOT)
1/2 ts Garlic Powder
1/2 ts Onion Salt
1 lb Beef Roast
1/2 c Soy sauce
1/2 ts Garlic Salt
1/2 ts Lemon Pepper

Marinate 1 hour or overnight. Bake in oven 150 to 170, overnight for 10 - 12 hours.
Beef Jerky #4

1 Flank Steak Or London Broil
Coarse Black Pepper
1/2 c Soy Sauce
Garlic Powder

Cut flank steak or london broil into 1/4" strips. Sprinkle with garlic powder and coarse ground black pepper. Marinate in soy sauce for 24 hours. Bake in 150 degree F oven for 10 to 12 hours. DO NOT exceed 150 degrees F.

Beef Jerky #5

2 lb London Broil
1/2 c Soy sauce
2 tb Worstershire sauce
2 ts Garlic powder
2 ts Onion powder
2 ts Fresly ground black pepper
2 ts Re d pepper flakes
2 tb Liquid smoke

Freeze the London Broil or other lean roast. When ready to make jerky, remove the roast from the freezer and let partially thaw. When just able to slice, first cast out all fat and then slice against the grain in thin (1/4 inch or less) slices. Cover the meat with the marinade, turn from time to time and let marinate overnight. In the morning line a shallow cookie sheet with a few layers of paper towels. Place on lower rack. Place upper rack in oven in top position and lower rack in lower position. Hang the beef slices from the upper rack with tooth picks above the paper towels. 6 hours at 160F average temp is about right. If your oven is real tight, you might crack open the door a bit to allow the water vapor to escape.

Cheap Homemade Meals

Everyone loves to go out an eat at fast food restaurants and dine in restaurants, but with the cost of gas being so high plus with just the cost of one meal for a single person being 5 dollars or more, eating out 3 or more times a week can be very expensive.
